Ingredients

• 1 cup mini potatoes
• 3 carrots (sliced)
• 3 celery stalkes (sliced)
• 1 15oz can pinto beans
• 1/2 onion (sliced)
• 1/2 cup frozen corn
• salt and pepper to taste

Instructions

1. In a microwave safe bowl add all ingredients.
2. Cook in microwave until potatoes are soft (roughly 25-30 minutes), stirring periodically.
